Dont think Savy B - think something completetly different. A nose of pineapple and passion fruit....body that is savoury and complex. Doesnt drink like a sav blanc.
As per the winemakers own words - When I first started making wine, my friends Matt and Ally asked if I could please make a Sauvignon. I said ‘over my dead body’. I couldn’t stand the stuff. Then I discovered the wines of Styria, a lesser known region of Austria that produces some of the most vivid, bright and electric Sauvignons I’ve ever tasted.
The perfect wine for Mexican food - Pork Carnitas or a grilled pineapples on the braai. This wine is the perfect pairing for mexian or asian food!
For Just Kidding, Angelo keeps the cellar tinkering to a minimum—organic grapes were destemmed and pressed. The juice was then left to settle overnight in tank and racked off the gross lees into old oak barrels for wild fermentation and 10 months maturation. Bottled unfined and unfiltered, this electric Sauvignon Blanc offers jolts of tropical fruit freshness and rich honeydew melon texture. It's snappy and sassy and anything but basic.
Grapes were destemmed, and pressed in a pneumatic press. The juice was settled overnight in tank and racked off the gross lees to old 225L and 300L French oak barrels. Spontaneous fermentation then started, and once finished, the wine was aged in barrel for a further 10 months. Bottled unfined and unfiltered with a small addition of SO2.
