The grapes were 40% whole bunch fermented with fermentation occurring naturally and one punch down performed daily. The wines underwent malolactic fermentation in barrel. The barrels were blended after 9 months in old French oak barrels and bottled right after. The Cinsault is bottled earlier than our other red wines to maintain the crunchy fruit vibrancy unique to Cinsault. No enzymes or commercial yeast was used in making the wines.
The wine is made from an old vine vineyard planted on the farm Rustenhof in the Firgrove area. The bush vines are dryland farmed. The soils are decomposed granite with under laying sandstone which gives this wine its elegance and finesse.
Tasting Notes: On the nose potpourri, rose petals, red cherry, cranberry, strawberry, and herbal fynbos, with occasional spicy/savory notes of cured meat. Crunchy red fruit (redcurrant, pomegranate) with bright, juicy acidity. It is medium-bodied with a "fine" or "satin" texture. Low to medium alcohol (~13%), powdery, fine tannins, and a dry, clean finish. Known as a lighter, elegant, and "lifted" style of wine, often showing more savoury, earthy complexity as it ages
Food Pairings: Its delicate tannins pair perfectly with rustic, savoury, and Mediterranean dishes like roasted lamb, duck, chorizo, garlicky sausage with polenta, and tomato-based pasta or pizza. Roasted & Grilled Meats: Lamb chops, roasted duck, picanha steak, and sausages. Savoury & Earthy Flavors: Beef/ox tongue (as prepared at Upper Union), lentils, bean stews, and roasted root vegetables. Mediterranean: Moroccan tagines, red curries, and rich tomato-based dishes (e.g., Bolognese).
Grapes from a vineyard in Firgrove. 50% whole-bunch fermentation, maturation lasting nine months in older 500-litre barrels. The nose shows dark cherry, floral perfume, a notable but not unwelcome fynbos character and spice. The palate is strikingly pure with lemon-like acidity and powdery tannins, the finish is dry rather than astringent – nice clarity and tension. Alc: 13%. CE’s rating: 94/100.
