The 2025 Olifantsrivier Assyrtiko is an exploration into the new and exciting varietals that are available in the West Coast area, where we have some of the most extreme growing conditions in South Africa. This wine was made to showcase how new and more drought tolerant varietals can withstand the tough conditions of this area.
Grapes were picked early in the morning to preserve freshness, then cooled down before being wholebunch pressed to settling tanks. The grapes were whole bunch pressed to a settling tank and left to settle overnight. The next morning the clear juice got racked to a stainless steel tank to start fermentation.
Spontaneous fermentation started after a day and the juice got fermented with its’ gross lees for three weeks after which aging in stainless took place for 5 months.

These Vineyards were planted in 2021 on Silty soils 25 kilometres from the Atlantic ocean.
Tasting Notes: 'The nose is floral, lime, peach, minerals, wet stone. On the mouth there is an intense sensation of saltiness with some lime and minerality.' – Winemaker
