The Sauvignon Blanc grapes came from the beautiful Vaalvlei and Stonefields vineyards in Stanford, which are close to the ocean and have decomposed granite soil. The Semillon is from La Vierge in the Hemelen-Aarde Valley. Sauvignon Blanc 88% | Semillon 12%
The Sauvignon Blanc was settled and then fermented in a mixture of small egg shaped tanks, old wooden barrels and stainless steel. Semillon was fermented in stainless and spent 6 months on lees in a special egg
shaped tank.
Tasting Notes: This is an elegant, layered Sauvignon Blanc, reminiscent of a dry white Bordeaux. A sophisticated, rich wine with layers of citrus, straw and minerality, herbal notes and a hint of creamy vanilla.
Food Pairing: With its vibrant citrus, green apple, and mineral-driven flavour profile. It is a versatile, crisp wine that pairs excellently with light, fresh, and herb-driven dishes. The high acidity makes it a natural match for raw oysters with lemon, grilled prawns, calamari, or lightly seasoned white fish like sea bass or hake. South African Favourites: A fresh, moist, and succulent braaied snoek is a top pairing recommendation.
