A blend of Syrah, Grenache Noir, Mourvèdre and Carignan. The complexity of this wine lies in the collection of 10 different vineyard sites on the Olifantsberg Mountain. Long, gentle extractions are employed and the blend is created after each component has matured separately. Stony and wild with sage, spicy bramble and red berry fruit. The wine defines our purpose.
Tasting Notes: Savoury and complex, with prominent aromas of olive brine, tomato leaf, clove, cinnamon bark, and ripe dark fruits like black cherries. Full-bodied and structured yet refined, showing notes of white pepper, bramble, and red berry fruit. The palate is often described as savoury, meaty, and concentrated. It has fine tannin grip (lightly grainy) balanced by lively, bright acidity.
Food Pairing: Because of its structured tannins and savoury, slightly rustic character, it pairs exceptionally well with rich, intense meat dishes and smoky flavours. Grilled Meats: This is considered a perfect "braaibroodjie" (barbecue sandwich) wine, as well as an excellent match for charred steak, beef fillet, and lamb chops. Slow-Cooked Stews: Rich, savoury stews like beef bourguignon or a slow-roasted lamb shank with rosemary complement the wine's structured, savoury profile. Game Dishes: It pairs beautifully with wild game, such as venison, deer, or ostrich, which matches the wine's "wild" aromatic profile. Herbal & Umami Flavors: Dishes featuring thyme, rosemary, sage, and roasted vegetables (especially tomato-based) work well with the herb-forward and savoury notes of this wine
Featuring what Ferdi Visser calls "salt and pepper varietals" as well as the Rhône Valley's most famous grapes, this is a delicious cuvée of Syrah, 26% Grenache, 22% Mourvèdre and 18% Carignan.
