Our Grenache Blanc story is that of high-density echalas vines (vine-to-post) on weathered clay-shale rich soil at 450 metres above sea level. Natural freshness and complexity are built through multiple picking dates, whole-bunch pressing and natural fermentation. The wine shows subtle lime blossom and green herbal notes, then white peach and quince, followed through by a richly textured palate and balanced acidity.
Tasting Notes: Subtle lime blossom, white peach, quince, green herbs, and slight flinty reduction. Richly textured and complex, combining generosity with tension and a mineral-driven core. It has a "friendly grip" or pithy, savoury finish with a well-balanced acidity. Matured for 10 months in a combination of seasoned French oak barrels, foudres, and concrete. A "serious, structured white" that is both fresh and complex, suitable for immediate drinking or, according to, mid-term cellaring.
Food Pairing: Because of its structured, fresh, and slightly creamy nature, it pairs best with dishes that have richness but also need a touch of acidity. A white that can stand up to hearty meals. Grilled White Fish: Pair with oily or fleshy fish like seabass, dorado, or halibut. Chicken Dishes: Excellent with roast chicken or chicken in a tarragon cream sauce. Pork: Spiced pork shoulder or pork tenderloin, utilizing the wine's spice notes. Seafood Risotto: The creamy texture of risotto matches the wine's oaked body.
