The 2022 blend consists of 52% Shiraz, 21% Cabernet Sauvignon, 15% Mourvèdre, and 12% Grenache Noir.
The Cabernet Sauvignon, Grenache Noir and Mourvèdre were all fermented in small batches in open bins. We continued experimenting with stalks in the open bins to add freshness and to balance the dark fruit. The Shiraz portion was fermented in stainless steel tanks as usual with regular pump overs. All the components were pressed directly into barrel and aged separately. Some of the batches did malolactic fermentation in barrel which gives a fuller mouth feel and structure. This vintage was in barrel for 12 months with 10% new French Oak.
Tasting Notes: The wine shows a ruby red color with aromas of ripe cherry, cinnamon, mulberry tart, and a slight toastiness. The palate is juicy red fruit entry, with a long, balanced finish.
Food Pairing: Excellent with grilled meats, hearty stews, or matured cheeses
Saboteur is a wine that has a loyal following, combining 52% Syrah, 21% Cabernet Sauvignon, 15% Mourvèdre and 12% Grenache. Firm, serious and appropriately uncompromising, it has a nice medley of plum, damson and cassis, a touch of wood spice and a firm backbone of tannin. 2026-31. Tim Atkin 91
