A distinctive expression of Swartland Mourvèdre—wild yet refined, with complexity that unfolds beautifully over time.

The grapes were naturally fermented in our open-top concrete "kuipe" and were punched down twice a day during fermentation. Partial whole bunch fermentation has made for an expressive burst of freshness in the final wine. After fermentation, the juice was transferred to seasoned French oak barrels and left to mature for around a year. Very light filtration prior to bottling.

Tasting Notes: Initially marked by savoury notes of smoked game, dried herbs, and earthy garrigue, reflecting the Mourvèdre character rather than oak influence. The bouquet evolves toward black cherry, mulberry, violet, and crushed rose petal. The mid-palate is concentrated and layered, showing bitter licorice root, blackcurrant, mulberry, and a touch of sour cherry. Partial whole-bunch fermentation and gentle extraction lend finesse, taming Mourvèdre’s natural intensity. As the fruit integrates, spice emerges with violet, rose, orange peel, and subtle clove. Medium to full-bodied, with firm but polished tannins and balanced acidity. The finish is long, savory, and floral, emphasizing authenticity over sweetness.

Food pairing: The wine has a slightly tannic structure, making it ideal for cutting through fatty, rich, and flavorful food.  Serve with roasted lamb, game meats, charred vegetables, wild mushroom dishes or aged cheeses that complement its savoury edge and spice.
