This Johra matures after a period of a little over four years, which is notably shorter than the maturing of the famous "Vin Jaune" wine, which traditionally could take as long as six years or more to reach its maturity.John allows his wines to mature under a layer of yeast, similar to the Jurassic period. Similar to a Vin Jaune aged under flor. Clean Sauvignon Blanc juice is picked ripe, pressed and fermented and left for flor to start growing 2-3 weeks later. It is is then aged under flor for 4.5 years. The wine evokes a dry sherry with aromas of marzipan and fennel. It’s soft on the palate with concentrated flavors and bitter and saline notes. A good aperitif wine. 14% alc.
Quite a crazy stuff in the absolute Vin Jaune style: aged for 4.5 years in oak barrels under flor yeast, it reveals a rich aroma of honey, nuts, caramel, and freshly baked bread. It's most reminiscent of the finest single-vineyard Manzanilla sherries. On the palate, austere, intensely salty, and with a brittle charm in the finish. Unbeatable with lobster bisque or aged Comté cheese – a wine for connoisseurs!
Food Pairing: Its ultimate pairing is aged Comte cheese and walnuts. It also excels with dishes containing mushrooms, cream sauces, poultry (especially chicken or Bresse poultry with morels), curry, shellfish, and charcuterie.
Decanting: It is highly recommended to decant the wine, sometimes up to 24 hours in advance, to let it breathe, as this allows the complex, nutty, and curry-like aromas to emerge.
