Chenin blanc has been farmed in the Swartland for centuries. This wine is made to highlight the history and convey the purity of Chenin blanc made from vineyards planted around the Paardeberg Mountain. The energy and texture provided by the Paardeberg's granite soils are perfectly captured from these mainly dry farmed bush vines and is a testament to the resilience and heritage of these historic vineyards.
Harvesting took place in the morning and the grapes were transported to the winery where it spent a night
in a cold room. The grapes were whole bunch pressed the next day and settled overnight without the use of
enzymes. The juice was racked the following day into foudre and old 300L barrels and fermented naturally.
The wine spent 10 months in foudre and barrel and was then blended and bottled.
