Stellenbosch red wine made from a blend of 60% Cabernet Franc and 40% Cabernet Sauvignon. Crafted by winemaker Pieter Walser.
The grapes were picked at optimal ripeness and cooled overnight to 4 degrees celsius. The next morning the grapes were destemmed to open top fermenters. The juice underwent spontaneous fermentation and stayed on the skins for as long as possible. Pressed into French oak small barrels, 25% new, 18 months in barrel, blended and bottled.
Tasting Notes: A fragrant, complex bouquet of dark berries, black cherries, and plums, intertwined with earthy undertones, spice, tobacco, and subtle wood influence.Full-bodied and rich, delivering flavours of cassis, blackcurrant, graphite, and tarragon. It features a mineral freshness backed by firm, fine-grained tannins. Subtly woody with a beguiling freshness, offering excellent length and focus
Food Pairing: This wine pairs well with hearty dishes such as beef, lamb, poultry, and game (e.g., venison). Its rich fruit flavours and structured tannins complement roasted meats and savoury stews.
